mid-May seasonal update

This year, the changing of the seasons feels different. The past winter was long and cold, and so far, spring has been unusually chilly too. It feels like nature is giving us a lesson in patience - all the changes that we're so looking forward to seeing are happening slowly, carefully & gradually. Nothing is rushed and it's as if we're still supposed to look inwards, rest & enjoy the stillness for a little longer.


The new foraging season has started but I've mostly picked things to eat here and now instead of preserving them for the rest of the year. My body is craving the nourishment from wild greens so this is what I'm giving myself & focusing on until I feel more energised to start with other herbal projects.



Cowslip leaves & flowers, dandelion leaves, blackcurrant leaves, goutweed & nettle have been the key components of fresh salads that I've been having nearly every day.



Here we added steamed cauliflower, crispy tofu, some seeds & a salad dressing for a delicious, hearty meal.


I'm over the moon to have easy access to all of these nutritious plants this year and I am truly loving living in the countryside again. The most exciting thing is that it's just the beginning as we have all the warmer days still ahead of us.
